The phase change of water from a liquid to a solid state, such as when water turns to ice, is a dynamic process with significant implications in agricultural science, particularly in fruit cultivation. During this transition, water releases what is known as latent heat. Latent heat is the energy released or absorbed by a substance during a phase change without a change in temperature. Specifically, when water freezes, it releases latent heat, which can have a protective effect on plants during frost conditions.

This concept is analogous to how a steam radiator works to heat a room even after the boiler is turned off. As steam condenses into water, it releases heat, warming up the surroundings. Similarly, when water sprayed on trees begins to freeze, it releases heat, which is absorbed by the fruits and surrounding tissues, keeping their temperatures slightly higher than the freezing point of water. This slight increase in temperature is crucial in protecting the fruits from frost damage.

Frost protection is a vital concern for farmers and gardeners, as frost can cause significant damage to a wide range of plants, including fruit trees. One innovative and practical method used to prevent frost damage is spraying plants with water before a predicted frost. Although it may seem counterintuitive to add water to plants when temperatures are expected to drop, this method leverages the latent heat released during the freezing process to create a thermal buffer.

When water sprayed onto plants begins to freeze, the transition from liquid to solid releases latent heat, which warms the surrounding area. By doing so, it maintains the temperature of the plant tissues above the critical point at which ice crystals would form inside the cells, thereby averting potential frost injury. Additionally, the thin ice layer that forms on the plants can act as an insulator against the colder air temperatures.

The cellular structure of plants is susceptible to damage from freezing temperatures. Water within the plant cells can freeze when exposed to frost, expanding and potentially rupturing the cell walls. This can have devastating effects, as it disrupts the integrity of the cells, impairs nutrient and water flow, and ultimately could lead to the death of plant tissues.

Plants contain solutes such as sugars and salts in their sap, which lower the freezing point of the water inside the cells compared to pure water. However, under severe frost conditions, even this natural antifreeze is insufficient to protect them. Applying water externally just before a frost can prevent this internal freezing from happening. As the external water freezes and releases latent heat, it keeps the temperature around the cells above their lowered freezing point, thus limiting any cell damage due to the formation of internal ice crystals.
