Phospholipids are crucial components of cell membranes, allowing the formation of the lipid bilayer that acts as a barrier for cells and organelles. Similar to triglycerides, phospholipids have a glycerol backbone. However, they differ by having only two fatty acid chains and one phosphate group attached to this backbone.
The phosphate group is connected through a phosphodiester bond, which gives the molecule its unique characteristics. The phosphate can also bond with additional molecules, creating different types of phospholipids with varied functions and properties.
This variation is key for the membrane's fluidity, flexibility, and its ability to participate in cell signaling processes, offering more than just structural support to the cell.

Amphipathic molecules, like phospholipids, have the unique ability to interact with both water and fat, due to having hydrophilic (water-attracting) and hydrophobic (water-repelling) properties. This dual nature is due to the structure of phospholipids: a hydrophilic head (phosphate group) and two hydrophobic tails (fatty acid chains).
This property is crucial for forming the lipid bilayer of cell membranes, where the hydrophobic tails face inward, shielded from water, and the hydrophilic heads face outward towards the water.
Amphipathic properties enable phospholipids to form micelles and liposomes, which are useful in delivering drugs and other molecules in medical and industrial applications.
