The boiling point is the specific temperature at which a liquid turns into gas throughout its entire mass, not just at the surface. For water, this temperature is commonly known at sea level as 100 degrees Celsius ((212 degrees Fahrenheit)). At this point, the water's vapor pressure equals the atmospheric pressure, allowing bubbles to form within the liquid and rise to the surface, bursting into steam.

Every liquid has its unique boiling point, which can be altered by changes in atmospheric pressure. For example, at higher altitudes where the air pressure is lower, the boiling point of water decreases. Understanding the boiling point of different substances is crucial in industries like culinary arts where the cooking temperatures directly affect the taste and texture of food, and in chemical engineering where controlling the temperature is vital for reactions and safety.

Phase changes in matter refer to the transitions between different states of matter: solid, liquid, and gas. Vapor pressure is an indication of a liquid's evaporation rate and is defined as the pressure exerted by a vapor in thermodynamic equilibrium with its condensed phases (solid or liquid) at a given temperature in a closed system. When the molecules of a liquid gain enough energy, they can overcome the intermolecular forces that hold them in the liquid state and become gas molecules. These gas molecules exert a pressure against their container and the liquid surface, known as vapor pressure.

As the temperature of the liquid increases, so does its vapor pressure, until it reaches a point where it equals the external atmospheric pressure; this is when the liquid boils.
