Amino acids are the building blocks of proteins. Each amino acid consists of a central carbon atom attached to four different groups:

• An amino group (–NH₂)
• A carboxyl group (–COOH)
• A hydrogen atom (H)
• A distinctive side chain, often referred to as the R group, that gives each amino acid its unique properties

There are 20 different amino acids commonly found in proteins, and the sequence in which they are arranged determines the structure and function of a protein. Simple changes in these sequences can lead to profound effects on a protein's functionality.
Amino acids can be grouped into categories based on the characteristics of their side chains, such as nonpolar, polar, acidic, and basic.

The type of bond that links neighboring amino acids in a protein is known as a peptide bond. A peptide bond is a covalent bond that forms between the carboxyl group of one amino acid and the amino group of another.
The formation of a peptide bond results in the release of a molecule of water, a process known as dehydration synthesis (more on this below). The pattern repeats as amino acids link together, forming long chains called polypeptides.
Peptide bonds are crucial for the primary structure of proteins, helping to maintain stability and confer the protein's specific shape when folded. Breaking these bonds typically requires enzymatic action or extreme conditions, highlighting their strength and importance in biological molecules.

Dehydration synthesis is a chemical reaction that involves the coming together of two molecules with the removal of a water molecule. In the case of forming peptide bonds, this process occurs between the amino group of one amino acid and the carboxyl group of another.
During dehydration synthesis:

• The –OH (hydroxyl group) from the carboxyl group of one amino acid combines with an –H (hydrogen atom) from the amino group of another amino acid.
• This interaction results in the formation of a water molecule (H₂O) which is released from the system.
• The remaining atoms form a covalent bond, specifically the peptide bond, linking the two amino acids together.

Generally, dehydration synthesis is a common way to link smaller molecules into larger ones, such as forming polysaccharides from monosaccharides, or nucleic acids from nucleotides.
This type of reaction is fundamental in various biological processes, enabling the construction of complex macromolecules necessary for life.
